Divitrad Compact

DiviTrad® Compact Legend is a square tank divider-former, capable of dividing dough into 4×5 equal pieces and fitting into the smallest of working environments. DiviTrad® allows «classic» division before proofing and «traditional» division to form baguettes and bake immediately.

16’’x16’’ cast aluminium tank.
Metal lid in aluminium, covered with a stainless steel sheet. Spring of the lid is protected by a stainless steel cover.
Ergonomic aluminium handle, closing by eccentric.
Cutting grids (not included with the machine) available and easily interchangeable.
Automatic knife lift (stainless steel 304, ressure 50 bars) for easy cleaning.
Side maintenance access with Quick Access release system, for easy cleaning of the machine interior.
Anti-flour spillage device.
Flour collection tray at the back of the machine.
Adjustment of the tamping pressure (40-50 bars), limiting the degassing of the dough to favor a nice honeycombing.
Fold down table (accessory) to facilitate the transfer of the dough pieces after division.
